1. A Week on Koh Lanta Island

Location: Koh Lanta is situated in the southern most district of Krabi Province, approximately 70 kilometers from Krabi province. It lies on the west coast of Andaman Sea in between Krabi and Phi Phi Island. Large Size Island with 6 km wide and over 30 kms long, 9 beaches lie from north to south along the sunset coast. Stunning scenery, fantastic white sandy beaches, coastlines have more than 70 small islands and plenty with forest, coral reefs and under water life.
Itinerary
- Day 1: Arrival at Krabi Airport and transfer to the hotel.
- Day 2: Start your week with a trip to the local market in the morning followed by a cooking session on the beach at lunchtime for some exciting fusion Thai cooking, ready just in time for sunset.
Timings:
Pick up time in the Layana hotel lobby is 11.00 am. The market trip will last about an hour followed by a welcome drink at the school. The cooking session follows and ends with a late lunch (or early dinner!) until about 5.00 pm. Relax by the beach bar - transport will be arranged back to the hotel whenever you are ready to return. - Day 3: You have the entire day free to explore, swim, try out the restaurants or just do nothing at all
- Day 4: Your cooking session today is at lunchtime where you might be making spring rolls, prawn soup, and barracuda with herbs, continuing through to the evening with an early meal of what you’ve made
Timings:
12.10pm Pickup in the Layana hotel lobby. The cooking Session, late lunch/dinner will run through till approximately. 5.30 pm. Watch the sun set with a drink by the beach bar - transport will be arranged back to the hotel whenever you are ready to return. - Day 5: Another day completely free to explore the island or relax
- Day 6: You have the day free, and your cooking session today starts at sunset and continues till 10.00pm. You’ll be making delicious three flavoured fish, spicy salads and Thai noodles. A very social and fun session.
Timings:
5.10pm Pick up in the Layana hotel lobby. The cooking session and dinner will run through until approximately. 10.30 pm with transport back to Layana after. - Day 7: Your last cooking session, where you’ll make an authentic green curry, together with delicious fish steamed with lime and herbs. The class is followed by a beachside meal of what you’ve prepared while you watch the sun go down

South Thailand has a definite season from the beginning of November though to the end of May and any of these months are a good time to go. The peak months are December to March, which also tend to have the best weather.

Location
‘Lanna’ the name of the region around Chiang Mai, northern Thailand, means ‘a million paddy fields’ and the Four Season’s Cooking School is set in the Mae Rim valley, overlooking terraced rice fields and misty mountains. Four Seasons properties are spectacular and this resort - tranquil, panoramic yet minutes from Chiang Mai, the artistic and cultural capital of north Thailand is no exception. The hands-on lessons at the stunning Lanna cooking school is the hands down most luxurious way to learn to cook!
Overview: The cooking classes run every morning except Sunday from 9.00 am to 1.00 pm. Each session has it’s own emphasis and four dishes are taught at each one. You can choose 3 modules from the six on offer to suit your tastes and interests. If you would like to do all six please let us know and we can book them for you. The rest of the time is entirely free to enjoy the resort or to explore Chiang Mai.
Monday: Spicy and savoury salads. You will learn how to prepare an array of savoury and spicy salads, and be introduced to traditional Thai cooking utensils that are still used today.
Tuesday: Traditional Soups and Noodles. Learn about the different types of noodles. Visit the school’s herb and spice garden.
Wednesday: Freshwater Fish. Learn the different ways of preparing an array of tantalizing fresh water fish during this module. Whether stir-fried, steamed or crispy, Thai cuisine has perfected the art of extracting intense flavours from any fish.
Thursday: Thai Curries. Learn about the secrets of preparing Thai curries from scratch and enjoy the flavourful array of dishes over lunch. Chiang Mai’s famous Kaow Soi Kai (Chiang Mai curry noodle soup with chicken) will be introduced in this module.
Friday: Thai Appetisers. Be introduced to the traditional Khantoke dinner set-up and its historic meaning. Enjoy Thai hors d’oeuvres and tasty starters in the traditional manner. Learn how to make Thailand’s famous iced tea and iced coffee.
Saturday: Chef’s Specials. The Executive Chef will create a traditional Thai menu for you to recreate at home. Learn his tips and tricks as he prepares a delicious five-course meal with the freshest produce from the local markets.
